A Blind Pig in High Springs? This one’s actually a pizza


Prohibtion Pizza is now open at 18559 NW 237th St. High Springs
Fans of New York-style pizza will have to sneak off to High Springs if they want to give Alachua County's latest pie a try.
Prohibition Pizza, located next to the Priest Theater and across the street from the High Springs Brewing Company at 18559 NW 237th St., opened last week following a ribbon-cutting and celebration with local officials and the Chamber of Commerce.

Owners Kelly and Dave Potter trained under master Pizzaiolos in New York and earned the certification themselves. They then spent three years scouring the U.S. for the best ingredients they could find.
"We're bringing what we learned and even some of the flavors of New York back here with our New York-style pizza in High Springs," Kelly Potter said.
While customers can customize their 12- or 16-inch pizzas any way they like, Potter said it's the restaurant's specialty pizzas that make it stand out.
"We put in a lot of time to get our flavor profiles just right," she said of the specialty pizzas, which cost between $20 and $24 for a large.

"We never expected to have the response that we did. We have just been humbled by everyone coming out and trying us out," she said. "We have continued to make more dough and more dough and more dough, and every day it continues to sell out."
Some of that business is surely coming from patrons directly across the street at the High Springs Brewing Company, whose beer is used to make two of the dishes at Prohibition Pizza.
The beer is used to make the cheese sauce for the Bavarian pretzel appetizer, as well as the "Beeramisu" dessert, which is made with ladyfingers, espresso and mascarpone mixed with the brewery's "Midnight Train" porter and topped with cocoa and chocolate shavings.
Eating a blind pig
Those who order "A Blind Pig" — a specialty pizza made with ham, pineapple, jalapeños and green olives — even receive a token for a free pint of beer at the brewery.
"We have a very synergetic relationship with the High Springs Brewery," Potter said. "They are just fantastic."
Prohibition Pizza is open Mondays, Wednesdays and Thursdays from 11:30 a.m. to 8 p.m., Fridays and Saturdays from 11:30 a.m. to 9 p.m., and Sundays from 11:30 a.m. to 5 p.m.
